A Neighborhood Bar on Coral Way

The Gibson Room is a neighborhood bar on Coral Way, rooted in great food, sophisticated drinks, and community. A residency by Miami Slice Hospitality in partnership with Ariete Hospitality Group, it occupies a corner in Miami’s historic Shenandoah neighborhood. The space is an ode to Florida: dark walls, a grand piano, taxidermy, and a mounted Blue Marlin set a throwback, unpretentious mood. Live music and vinyl DJs play every night, making it light enough for an after-office drink and dark enough for an after-party nightcap. Walk-ins are always welcome.

Chef-Driven American Fare

Chef Michael Beltran, who holds a Michelin star for his restaurant Ariete, teamed with executive chef Kris Huseby to create the menu. The kitchen focuses on elevated American bar food: a double smash burger with B&B pickles and special sauce, crispy chicken schnitzel, and strozzapreti with diced ham. The signature flan, made with foie gras and rum-drunken figs, is a longtime favorite. Small plates include bone marrow with buttermilk biscuits, pickled shrimp “ceviche,” and a daily changing selection of charcuterie and cheeses. Larger plates range from fish and chips with sauce gribiche to a roasted chicken ballotine with maple and boniato. Desserts like hot banana cake with banoffee and rum, and coconut cream pie with cocoa and lime, round out the meal. The menu reflects local ingredients and seasonal changes.

Cocktails with Clever Twists

The cocktail program is the real art here. Classics get clever updates: the namesake House Gibson adds sherry to the gin or vodka and vermouth formula, while the Penicillin gets a Scotch float. Other offerings include the Jazz Room G&T, the Oaxacanite with mezcal and tequila, and the Video Vixen with passionfruit and bubbles. The bar also offers a carefully curated wine list and local draft beers. Happy hour is offered nightly, and a late-night menu and drink specials are available Thursday through Saturday. Private events can be arranged.

The Gibson Room earned a Michelin Recommended distinction in 2026, a nod to its refined yet unpretentious approach to American dining and drinking in Miami.
