The story
Dampf Good BBQ started in a backyard. Brothers Nick and Bryce Dampf first tackled a pork butt on a Weber kettle, then graduated to an offset smoker for a Father’s Day brisket. That brisket sparked a journey that led to a pop-up in June 2021 and, eventually, a permanent spot at Phillips Farms in Cary. Their mission is grounded in faith—"Faith. Family. Food."—and they aim to be "salt & light" in their community, putting people before profits.
The cooking is straightforward and disciplined. Meats are smoked for 15 hours over oak wood and seasoned simply, letting the quality of the meat speak. The USDA Prime beef brisket is the cornerstone, sold by the quarter, half, or full pound. The beef ribs—huge "dino" bones—are the number one best seller, each bone enough for two. The smoked turkey breast is described as "the sleeper on any barbecue menu," and it delivers. All meats are available a la carte or as part of family-style feasts like the Big Dampf Feast (a half-pound of each meat, a beef rib, pork ribs, sausages, and four pints of sides) or the Texas Trinity (a pound of brisket, a pound of spare ribs, two sausages, and three sides).
In 2026, Dampf Good BBQ earned a Michelin Recommended distinction, a rare accolade for a BBQ pop-up that proves the straightforward, oak-smoked approach resonates far beyond the Triangle. The brothers continue to serve from their Cary location, with plans to open a brick-and-mortar somewhere in the Triangle—a family-friendly place where great barbecue and community come together.
