Sho Pizza Bar is a lively, inviting local pizza bar in the heart of East Nashville, recently recognized with a Michelin Bib Gourmand for quality and value. The name "Sho" is derived from shokunin, a Japanese word meaning a master of one’s craft — a fitting description for a team obsessed with the art of neo-Neapolitan pizza making.
From the dining room or the twelve-seat chef’s counter, guests enjoy direct views of the pizzaiolos working a handmade Stefano Ferrara Forni wood-fired oven. The pizza dough, perfected over several years by Chef Sean Brock, Trey Trench, and the team, uses Italian flour and is cooked with local hickory and oak, lending each pizza a subtle hint of Southern flavor. A 72-hour fermentation in a custom temperature-controlled dough room yields a light, airy, and pleasantly chewy crust that is extremely digestible while still tasting indulgent.
The commitment to craft extends to every ingredient. Sho selects the highest quality products globally and locally, flying in DOP buffalo mozzarella and fiore di latte from Italy every week. The crust is crimped before cooking, creating incredible air pockets. The result is a contemporary pizza that balances tradition with precision.
