The kitchen is led by Giorgia Caporuscio, an award-winning master pizzaiola. Named Pizza Maker of the Year by 50 Top Pizza USA in 2024, Giorgia carries on her family’s tradition. She is one of the few women in the pizza world to achieve such international acclaim, and her dedication is evident in every pie that emerges from the traditional Italian wood-fired oven.
The menu features over 30 types of Neapolitan pizza, all crafted with respect for tradition. The dough is naturally leavened and baked at 850°F for less than 90 seconds, resulting in a perfect balance of crispness, softness, and airiness with the signature charred “leopard spots.” Don Antonio is particularly renowned for its pizza fritta (lightly fried pizza), including the popular “Montanara” style, where the dough is flash-fried before a final trip to the wood-fired oven.
