Years ago, Chip Smith and Tina Vaughn opened a little restaurant in Kitty Hawk, North Carolina. They never imagined they would one day land in Tribeca with a beautiful escape of a restaurant—and yet, here they are. Eulalie is the realization of a pipe dream, a place where the constant factor in the equation is the guest. As Chip and Tina put it, "Our good fortune is the pleasure of your company."
The name Eulalie comes from a personal memory: a single-vineyard Cahors wine they loved in North Carolina, made by a winemaker named Eulalie herself. It’s a romantic notion that suits this intimate spot, where the goal is to make guests feel happy.
That warmth is the heart of Eulalie. In 2024, Tina Vaughn received the Michelin Guide New York Outstanding Service Award. The guide noted, "There is something really special about the level of service happening at Eulalie that evokes a time when service felt more personal." Inspired by their first travels to French countryside villages in 1997, Chip and Tina have recreated that atmosphere—but in the heart of New York City. Reservations are taken by telephone only, and the dining room is a no-phone zone. As the restaurant says, "The new luxury is time. A decompression. An escape from your day."
Chef Chip Smith’s cooking is classic French, served in a prix fixe format. The menu begins with a chef’s featured terrine for the table, followed by a selection of appetizers, a chef’s amuse, and then a choice of entrees. A wine pairing is individually selected to enhance each dish. The dress code is “NYC Swanky”—not formal, but subtle elegance that completes the room.
