The story

Hirohisa: Kaiseki in New York City – Preparing for Relocation

A New Chapter for Hirohisa

Hirohisa, the Japanese restaurant that earned a Michelin Recommended distinction in New York City, is currently preparing for relocation. The Thompson Street space that housed it now operates under a new concept, Soba Ulala. But the story of Hirohisa’s cuisine is far from over.

At its core, Hirohisa’s cooking is rooted in the traditions of kaiseki. The restaurant’s own team describes their approach as one defined by careful preparation, refined flavors, and a strong emphasis on seasonality. This philosophy shaped the menu each day, drawing on more than a decade of work by Chef Hirohisa and his team.

The techniques behind the dishes reflect this classic Japanese cuisine. For lunch, Soba Ulala continues to offer many of the popular set menus that guests enjoyed at Hirohisa, with minimal changes. Dinner features a primarily à la carte menu, inviting guests to enjoy carefully selected sake alongside dishes that carry forward the flavors and philosophy of Hirohisa.

What Made Hirohisa Stand Out

The restaurant’s reputation in New York City was built on this dedication to seasonality and craft. The Michelin guide recognized this commitment, awarding Hirohisa a Recommended distinction. This recognition speaks to the consistency and quality of the kitchen’s work.

The team at Hirohisa also demonstrated a spirit of collaboration. Past events included special pairing dinners with sake breweries like Born and Kokuryu, as well as wine collaborations with NORIA. These events allowed guests to experience the kitchen’s omakase alongside rare, unreleased bottles. The restaurant also hosted pop-ups, such as a three-night residency by Ginza Yamanobe, a creative fine Chinese omakase from Tokyo.

What’s Next

For now, the kitchen is focused on the transition. The team invites guests to visit Soba Ulala, where the lunch menu continues to feature Hirohisa’s popular dishes. The restaurant’s website notes that the cooking reflects the same techniques rooted in kaiseki, with the same careful preparation and refined flavors.

Hirohisa is not gone—it is simply preparing for a new chapter. The team looks forward to welcoming guests again at a new location, carrying forward the flavors and philosophy that made the restaurant a destination for classic Japanese cuisine in New York City.
