The story
At Hyun in New York City, the philosophy begins before a single bite. The restaurant grounds its work in a simple, powerful Korean greeting: "Have you eaten?" — a phrase that, in Korean culture, carries the same weight as "How are you?" It reflects a belief that people are at their best with a full stomach, and it is this spirit that drives everything the kitchen does.
Hyun is a Korean steakhouse that approaches the craft of meat with the precision of a temple. The team is meticulous when it comes to the quality of beef. They promise to only provide beef that has been prepared on the same day, using their experts' own technique, and they select only top-grade Japanese wagyu. The pursuit here is for what they call "the original perfection of meat" — from the selection of raw wagyu all the way through to its processing.
The restaurant offers its wagyu in curated packages, such as the "For 2-3 People" option, which includes three fresh cuts selected by the chef alongside a ssam combo. For larger groups, the "For 4-5 People" package offers six fresh cuts. Guests can also choose between marinated options like galbi and bulgogi, or opt for unmarinated cuts. The wagyu is delivered fresh and can be kept in the refrigerator for up to three weeks. Add-ons include the HYUN signature kimchi, sangchu-muchim, and pa-muchim — each a precise, flavorful companion to the beef.
The restaurant aims to maintain the taste and aroma of Korean food that has been around for many generations. They believe that only when the food, the atmosphere, and the space are all in harmony together can they provide a pleasurable experience of Korean food and culture. This balanced approach — fresh ingredients, deep cultural roots, and an unwavering focus on the beef itself — has earned Hyun a Michelin Recommended distinction.
A Korean steakhouse and an omakase experience under one roof, Hyun is a place where tradition and technique meet, and where the question "Have you eaten?" is answered with care.
