The story
Chef Peter Song, an actor who immigrated from China, was determined to bring authentic Northern Chinese cuisine to the U.S. He opened his first restaurant in Flushing, New York. Its success led to a second location in Hell's Kitchen in 2013—the spot now at 811 Eighth Avenue. Here, the kitchen focuses on two handmade staples: soup dumplings (xiao long bao) and hand-pulled noodles, both prepared fresh every day.
Each xiao long bao is steamed in small bamboo baskets, a technique from the Jiangnan region. The hand-pulled noodles (la mian) are stretched to order—the dough worked aggressively, pulled into thin, long strands. Signature dishes include Lan Zhou pulled noodles, Shanghai Steamed Buns (Xiao Long Bao), Duck Buns, and Pan Fried Buns. The menu also offers dim sum, chilled plates, and desserts from various regions of China. Voted New York's Best Soup Dumplings and Hand-Pulled Noodles Restaurant, the kitchen's dedication to craft earned it a Michelin Bib Gourmand in 2026, recognizing good quality, good value Chinese cooking.
