Moody Tongue Sushi brings the precision of a celebrated culinary brewery to a quiet corner of the West Village. The restaurant, a Michelin Recommended spot in 2026, is the New York outpost of Moody Tongue Brewing Company, and it reimagines the sushi experience through the lens of craft beer.
The space is intimate, anchored by a focused sushi menu overseen by Executive Sushi Chef Hiromi Iwakiri. Each piece is composed with the same restraint that defines great brewing—select ingredients, balance, and clarity. The kitchen lets the fish speak, and the beer list is designed to do the same.
Brewmaster Jared Rouben curates a rotating selection of 16 beers, including a New York exclusive: Shaved Black Truffle Rice Lager. Other specialties include Pressed Asian Pear Saison, served in a flute and reminiscent of vintage Champagne, along with Juiced Lychee IPA, Orange Blossom Belgian Blonde, and Yuzu Summer Ale. The beverage program also offers a thoughtful list of wines, sakes, spirits, and cocktails.
The philosophy is simple: beer and sushi both rely on delicate profiles. The subtle aromatics and textures of each style open up a wide range of pairing possibilities, from the crispness of a lager to the fruitiness of a saison.
Adjacent to the main dining room is The Hand Roll & Martini Bar, an eight-seat counter (with limited table seating) where hand roll chefs craft temaki in real time. The menu evolves daily, and the martini list is equally nimble. It’s a looser, more convivial counterpart to the omakase experience—ideal for a quick, high-quality bite.
