Risbo is a French rôtisserie restaurant and bar that landed in Prospect Lefferts Garden in 2017. The concept is simple: take the rotisserie traditions of Paris, give them a Brooklyn attitude, and serve it all in a space that feels like a neighborhood living room—with a beautiful garden. The restaurant earned a Michelin Recommended distinction, a nod to the precision and soul behind every plate.
Owner and executive chef Boris Ginet grew up in Paris, then spent nearly three decades in New York City. That dual identity defines Risbo. "Paris born, Brooklyn fed" isn't a slogan—it’s the kitchen’s philosophy. The menu reflects the many cultures that make up the borough, from Tunisian spices in the lamb sandwich to a vegan pulled pork made with shiitake mushrooms. But the heart of the kitchen is the French rotisserie.
Proteins are marinated and dry-brined for two days before they hit the rotisserie oven. The result is chicken that stays impossibly moist, pork with crackling edges, and duck that renders down to silky richness. On the dinner menu you’ll find roasted chicken, pork, leg of lamb, duck, and whole branzino—all cooked the same patient way. Sides like gratin dauphinois, roasted sweet potatoes, and spicy cabbage salad are designed to mix and match. For lunch, there are sandwiches and bowls: the rôtisserie chicken sandwich with avocado and Swiss on brioche, or the 7-hour leg of lamb sandwich with harissa and yogurt.
