Yoshino is the New York incarnation of a sushi master’s decades-long pursuit. Chef Tadashi “Edowan” Yoshida trained for eight years in Tokyo, starting at 18, before returning to his hometown of Seki to take over his father’s restaurant, Yoshino Zushi. He ran it for 18 years, then moved to Nagoya, where Sushi no Yoshino became critically acclaimed—ranked the number one sushi restaurant outside Tokyo. Now, Chef Yoshida has brought his vision to 342 Bowery, earning a Michelin star for his precise, traditional Edomae style.

The restaurant is a counter-dining experience, intimate and focused. Chef Yoshida describes his move to New York as a challenge to himself: to champion sushi as a traditional cuisine, to follow his own dreams, and to share Japanese culture with a global audience. The result is a meal that feels both deeply rooted and wholly present.

The Chef’s Philosophy

Chef Yoshida’s approach is one of quiet mastery. He honors the Edomae tradition—aging and curing fish to concentrate flavor—while letting each piece speak for itself. The nigiri is the star, served in a deliberate sequence that builds from light to rich. There are no distractions: no menus, no choices, just the chef’s omakase. The atmosphere is respectful, almost meditative, with the counter creating a direct line between chef and guest.

The Space and Setting

The room is understated, with warm wood and a focus on the counter. The dress code is smart business, and the child policy is 16 or older—signals that this is a place for serious dining. Reservations open daily at noon on Tock, 30 days in advance, and fill quickly. Yoshino does not accommodate vegetarian, gluten-free, or no-rice requests; it is a pure, uncompromising expression of Edomae sushi.
