The story
Edoboy is the creation of Sean “Sonny” Nguyen, the restaurateur behind Orlando’s DOMU and Tori Tori. Inspired by his and his wife’s travels through Tokyo, Osaka, and Kyoto, Nguyen opened this eight-person standing sushi bar in 2022 to bring a Japanese tradition to Florida: high-quality sushi at reasonable prices, served in an intimate yet casual environment. The name nods to “Edo,” the ancient name for Tokyo, where nigiri-zushi and the standing-eating style were born during the Edo Period.
Head Chef Tyler Inthavongsa leads a focused kitchen that turns out a tight menu of nigiri, aburi (torched) sushi, and temaki hand rolls. Guests order by marking a sheet—maximum twelve pieces per person for the one-hour seating—and hand it directly to the chef. Each piece arrives pre-brushed with house shoyu. The menu rotates through top-tier ingredients: bluefin tuna (lean akami and fatty toro), Faroe Island salmon, Japanese yellowtail, sea bream, sweet red prawn, and Hokkaido scallop. Hand rolls like the Akami-Toro-Uni (mixed tuna with uni, ikura, and chives) and the Blue Crab with truffle kewpie mayonnaise show the kitchen’s ambition. A miso soup made from that day’s fish bones is served at meal’s end and does not count toward the twelve-piece limit. Sets such as the Everyday Set and the Baller Set—which opens with hamachi-scallop tartare and caviar—offer a broader taste of the chef’s range.
