The story
Kabooki Sushi is the work of chef Henry Moso, a James Beard-nominated itamae whose path to Orlando began in his native Laos. After childhood travels across Southeast Asia, Moso arrived in Florida at fifteen and sharpened his skills at his mother’s restaurants, Bangkok Square and Origami Sushi. She remains his foremost inspiration. “She came here with two bare hands, and she worked so hard,” he recalls. At Kabooki, he combines locally sourced seasonal ingredients with the best cuts from Japan, crafting a dining experience centered on quality control, excitement, and surprise.
Kabooki operates two distinct spaces in Orlando. The original East Colonial location sits at 3122 E. Colonial Dr., while a second outpost serves the Sand Lake area at 7705 Turkey Lake Road. Both offer menus that reflect Moso’s philosophy: diligent detail meets creative freedom. The cuisine is contemporary Japanese, but the kitchen draws on a wider palette — Mexican vibrancy, French precision, and the curated integrity of Japan. The result is an authentically global encounter, served in settings that range from intimate counter dining to private rooms and chef’s tables.
The heart of Kabooki is its kaiseki-style omakase, available at both locations. Guests place their trust in Moso’s talented team from around the world, who present a multi-course progression of seasonal nigiri and small plates. The experience is booked separately through Tock and offers a front-row view of the chefs’ craftsmanship.
