The story
In Winter Park, just north of Orlando, Soseki offers an intimate 10-seat omakase experience that earned a Michelin star in 2022, just a year after opening. The name, meaning "cornerstone" in Japanese, reflects the restaurant's foundation: a modern, chef-driven approach to the traditional omakase format.
Chef Michael Collantes brings over twenty years of hospitality experience to the counter, having worked alongside culinary figures like Wolfgang Puck, Joël Robuchon, Eric Ripert, and Masa Takayama. At Soseki, he presents a multi-course tasting menu that blends Japanese technique with the bounty of Central Florida. The kitchen builds each menu from what inspires them that day—local seafood, Florida produce, and global fish—guided by the principle of shoshin, or "beginner's mind."
The dining room is a counter, placing guests directly in front of the chefs as they prepare each course piece by piece. A global sake and wine program, curated by the beverage director, accompanies the meal and challenges traditional pairing conventions.
Soseki’s cuisine is best described as Japanese-forward, globally inspired, and deeply seasonal. While the menu changes nightly, guests can expect a progression that highlights both the purity of sushi and the precision of modern European techniques. The restaurant accommodates pescatarian and shellfish restrictions with course substitutions, but does not offer a full vegetarian experience.
