The story
Just off the town square on 13th Street, The Hatch is a simple rotisserie and bar fueled by wood fire and small batch whiskey. Since opening in the summer of 2015, owners Maggie Cameron and Eric Connolly have created a cozy, comfortable joint where locals, wine industry professionals, and visitors mix easily at the bar over thoughtful cocktails and satisfying food. The intimate dining room, with its banquettes, high wood tables, and bar stools, invites conversation – one of the restaurant’s greatest compliments is that you can’t reach your table without saying hello to everyone at the bar. This warm, bustling atmosphere earned The Hatch a Michelin Recommended distinction in 2026.
The kitchen’s wood-fired rotisserie is the focal point of an open kitchen. The menu, driven by American comfort food, changes seasonally while keeping perennial favorites. Sauces are made in-house daily, and longer projects like fermented hot sauce and pickled produce are always in progress. The Hatch sources thoughtfully, from Marsh Hen Mill grits in South Carolina to Etto Pastificio pasta made in Paso Robles, and proteins like California-raised Jidori chicken or Tasmanian Wagyu tri-tip. Each item is kissed with wood fire, plated simply, and delivered to the bustling dining room.
The drinks program is equally intentional. Artful craft cocktails feature fresh produce, juices, and homegrown garnishes, alongside house-pickled fruits and even smoked meats. The whiskey list is extensive, and the wine program highlights Paso Robles producers with unique Hatch-focused blends, kegged wines served at proper temperature, and a Reserve Wine List with library releases.
