The story
Menya Ultra is the American outpost of a ramen empire that began in Odate, Akita, Japan, in 1994. Master Takashi Endo, a director of the Ramen Association Japan, opened his first stateside shop in a Clairemont strip mall in 2017—and it quickly became a local phenomenon. Today, three San Diego locations (Clairemont, Mira Mesa, and UTC La Jolla) draw lines daily for ramen that has earned a spot in the Michelin Guide California every year since 2021.
Everything at Menya Ultra starts with homemade noodles. The kitchen uses a special Hokkaido wheat called “Haruyokoi” to produce a noodle that is smooth, springy, and faintly sweet—no preservatives, no artificial colors, just salt and lye water. The signature tonkotsu paitan soup is cooked at extreme high heat to extract deep umami from pork bones, and no MSG is added. As Endo puts it, “Umami must come out naturally.” This commitment to clean, honest ingredients stems from his own experience with food allergies; he prepares every bowl as if for his own children.
Menya Ultra’s menu centers on four ramen styles: Tonkotsu, Miso, Tantan, and a Vegan Miso option. The classic Tonkotsu features pork broth with soy sauce and fish-flavored oil, topped with chashu, green onion, and wood ear mushrooms. For those seeking depth, the Miso ramen adds house-made miso, garlic oil, and a hit of chili. The Tantan men, inspired by Chinese dan dan noodles, comes with seasoned minced pork, chili oil, and either black sesame or a crispy cutlet version (Paiko Tantan). Appetizers like Nagoya-style fried chicken and gyoza round out the experience.
There are no reservations. Guests join a digital waitlist (tablets appear outside 30 minutes before opening) and receive text alerts when their table is ready. The policy keeps the line moving, and the kitchen’s single-minded focus on ramen freshness means bowls should be eaten within two hours. It’s a deliberate, streamlined operation that lets the food—this deeply flavorful Japanese ramen—speak for itself. Michelin has called it “a local hit since day one,” and for good reason.
