This boutique fine-dining restaurant in San Francisco, led by Chef Ryan Shelton, builds its identity around heavily theme-driven and immersive menus that change dramatically every three months. One season, guests might find themselves whisked to the Swiss Alps, scooping sprinkles of blooms off a green hillside while enjoying a menu of edible flowers. Another might invite them to a Mad Tea Party, complete with an Apple-of-your-Eye cake featuring a photo of themselves gazing up from the past. Chef Ryan Shelton brings a wealth of experience to Merchant Roots, having cut his teeth in fine dining and pastry at the Ritz Carlton, Laguna Niguel, and later serving as Chef de Cuisine at the two-Michelin-starred Baumé Restaurant. His passion for handmade pasta, charcuterie, and all things sweet is rooted in his proud Italian heritage. Joining him is Chef de Cuisine JJ Chan, a former U.S. Marine whose self-discipline and integrity drive his craft. Chan’s journey includes stints at Michelin-starred Avery San Francisco, where he became chef/owner Rodney Wages’ right hand man. Together, their intimate team works passionately to design recipes, craft plates from various materials, and carefully select wine pairings to match each immersive theme.
Merchant Roots hosts dinners Tuesday through Saturday, with seatings at 5:30 and 8:00 PM by reservation only.
