The story
Seline is Chef Dave Beran’s most personal project yet. The restaurant, named after his daughter Harvest Moon (Seline means “heaven” or “moon” in Latin), is built on fostering meaningful relationships. The layout intentionally removes barriers between kitchen and dining room, encouraging direct interaction between chefs and guests. Custom plateware and a service style designed to spark conversation turn the meal into a shared experience rather than a solitary one.
Beran describes the food at Seline as “storytelling through food,” striking a delicate balance between intrigue and comfort. The 14 to 17-course tasting menu showcases the many inspirations of the region, featuring a variety of meats, seafood, and vegetables. Each course feels both unique and familiar, always delicious. Priced at $295 per guest, the meal takes about two and a half hours to enjoy fully.
Beverage Director Matthew Brodbine works closely with Beran to ensure every drink complements the menu. The wine pairing highlights forward-thinking winemakers from around the world, while the non-alcoholic pairing features a thoughtful collection of house-made and curated beverages. A hybrid pairing is also available, and a tightly assembled wine list offers additional options.
The restaurant’s dedication to craft and connection has earned it a Michelin Recommended designation. Beran’s background — a James Beard Award for Best Chef Great Lakes, stints at Alinea and NEXT in Chicago, and his current role as chef/owner of the French bistro pasjoli — informs every detail. Seline marks a new chapter, drawing inspiration from his life and his newfound perspective after moving to California. Here, contemporary Californian cuisine becomes a medium for genuine connection.
