The story
Since 1979, Fogo de Chão has kept the flames of the culinary art of churrasco burning. What began on a traditional Southern Brazilian farm in the mountainous region of Rio Grande do Sul has grown into a global experience—and the Seattle location at 400 University Street brings that heritage to life. Here, guests are welcomed into the vibrant energy of a Brazilian steakhouse where fire-roasted cuts of meat are carved tableside by gaucho chefs. The full Churrasco Experience includes a continuous rotation of signature cuts, from Picanha (prime part of the top sirloin) to Fraldinha (bottom sirloin), all slow-roasted over open flames.
Alongside the grilled meats, the freshly curated Market Table offers seasonal vegetables, imported cheeses, and classic Brazilian sides. Those looking to mix the meal further can visit Bar Fogo, where Brazilian-inspired small plates and cocktails, including the signature Caipirinha, are served. The restaurant also hosts special events—such as the recent VIK Wine Dinner featuring a 100-point vintage paired with Wagyu New York Strip and Beef Ancho Bone-in Ribeye—demonstrating how Fogo continues to push the churrasco experience forward.
The wine list at Fogo de Chão Seattle has earned the Wine Spectator Award of Excellence in 2025, reflecting a careful selection of bottles from around the world. Among the highlights is the Founders Tribute Wine Collection, which includes four exclusive labels: Jorjão (a Malbec from Mendoza), Eulila (a red blend from Chile), O’Leão (another Chilean blend), and The Sonhadores (a Cabernet Sauvignon from Alexander Valley). Each wine is crafted to pair specifically with the restaurant’s fire-roasted meats—whether a leaner cut like the Double Bone-In Pork Chop or a rich dish like the Wagyu New York Strip. This dedication to pairing proves that the churrasco tradition, rooted in family and the landscapes of southern Brazil, still burns bright in Seattle.
