The story
At Streetlight Taco, the “molino” is the heartbeat of the kitchen. Volcanic stones grind heirloom Mexican corn into fresh masa, used for hand-pressed tortillas and other hand-formed shapes found throughout Mexico. The team works with partners to bring several family-grown heirloom corn varieties to Tampa, then simmers the whole grain to precise time and temperature standards to create nixtamal. This ancient process of nixtamalization unlocks essential minerals and nutrients, transforming simple corn into something deeply flavorful.
The menu is carefully planned from travels to the states of Puebla, Hidalgo, Oaxaca, Morelos, and Tlaxcala. The team learns from experience, friends, and family, soaking in the culture, food, and people of Mexico. “The hunt for new chiles, fruits, vegetables, and preparations makes the path less traveled even more exciting,” they write. “Sometimes you strike out again and again, but sticking with it validates the excitement in the end.”
That dedication earned Streetlight Taco a 2026 Michelin Bib Gourmand award, a recognition of good quality, good value cooking. It’s a fitting nod to a kitchen that brings the depth of Mexican cuisine to Tampa, one hand-pressed tortilla at a time.
