In Spring, Texas, just north of The Woodlands, Belly of the Beast is the realized vision of Chef Thomas Bille and his wife Elizabeth Bille. The restaurant, a proud recipient of a Michelin Bib Gourmand, is built on a first-generation Mexican American perspective, pairing Chef Thomas’s technical skill—honed in Los Angeles kitchens and shaped by his chef father and home-cooking mother—with Elizabeth’s commitment to exceptional hospitality.
The heart of the experience is the Chef’s Counter, an intimate, limited-seat setting where guests are guided through a seasonal, multi-course tasting menu. Each course is prepared in real time, emphasizing technique and storytelling, with the kitchen and table in close conversation. An optional wine pairing, exclusive to the counter, is designed to complement the menu and showcase a thoughtfully curated selection.
The food is a direct expression of the chefs’ cultural upbringing, travels, and time in kitchens around the world.
