The story
In Tomball, Texas, a restored historic home on North Elm Street holds something rare: a place where the traditions of Texas barbecue and the precision of craft chocolate live under one roof. Tejas Chocolate + Barbecue was founded in 2015 by Michelle Holland, Scott Moore, and Greg Moore. What began as a bean-to-bar chocolate operation steadily grew into a nationally recognized barbecue joint, earning a loyal following and a Michelin Bib Gourmand award in 2026 for its good quality, good value cooking.
The team took one of Tomball’s oldest residential buildings—the Tejas Craftory—and carefully preserved its soul while reimagining it as a living craft space. Today, that historic structure houses both the smoker and the chocolate studio, a place built for gathering, nourishing, and community.
The menu is built around classic barbecue meats: brisket, pulled pork, pork ribs, half chicken, turkey, pork belly, and a rotating lineup of sausages that includes both kielbasa and a chile relleno sausage. Signature sandwiches like the Brisket & Blues (sliced brisket with red onions, tomato, and blue cheese on a potato bun) and the Bird & Bacon (turkey with avocado, bacon, fried egg, and VerdeQ sauce) show a kitchen that isn’t afraid to push past tradition. Tacos, loaded nachos, and a stacked spud round out the offerings. Sides range from poblano mac and cheese and bacon coleslaw to a carrot soufflé and seasonal salads. The daily soups—tortilla soup on Tuesdays and Wednesdays, pork chowder on Thursdays, roja pozole on Fridays, brisket chili on Saturdays—add a rotating warmth to the menu.
The craft chocolate side isn’t an afterthought. Desserts include chocolate panna cotta, chocolate bread pudding, and chocolate truffles, all rooted in the same bean-to-bar philosophy that launched the business. It’s a rare thing to finish a plate of smoky brisket with a truffle made in-house, and that duality defines the place.

The award sits alongside statewide acclaim and a decade of smoke, fire, and flavor.
