The story
Since 1979, Fogo de Chão has kept the flames of the culinary art of churrasco burning. The founders grew up on a traditional Southern Brazilian farm in the Serra Gaucha, where they learned to cook in the churrasco grilling tradition. After formal training in Rio and São Paulo, they opened their first restaurant in Porto Alegre—a wood structure built from obsessive dedication to quality. The concept soon earned a reputation among politicians, businessmen, and celebrities, leading to expansion across Brazil and eventually to the United States in 1997 with a Dallas debut. The Towson, Maryland location brings that same heritage to the Baltimore area.
At the heart of the experience is picanha, the signature steak—a prime part of the top sirloin, lightly seasoned with rock salt and sliced thin. The gaucho chefs grill cuts on skewers over open flames, a technique that requires restraint to let natural flavors mature. Other highlights include the beef ancho (bone-in ribeye), grilled over direct heat to break down marbling for an intense profile, and the fraldinha (bottom sirloin), carved against the grain to preserve tenderness. The full churrasco experience also features filet mignon, bacon-wrapped steak, beef ribs slow-roasted for hours, and Wagyu enhancements available for an upgrade.
