The story
The H Street Northeast address feels like a well-kept secret – a narrow storefront that opens into a small, art-filled dining room with decorative ceilings and counter seating. Since 2011, Toki Underground has been the city’s original ramen house, a label the kitchen wears with pride.
The menu is built around deeply flavored broths. The Toki Classic Ramen sets the standard, with rich tonkotsu and perfectly chewy noodles. For heat, the Mala Garlic Tonkotsu adds Sichuan peppercorn and chili. Vegetarians and vegans are not afterthoughts: the Mushroom Shio and Shiitake Cashew Dan Dan show real care, with complex, umami-packed broths. Alongside the ramen, steamed buns (softer and more plush than most) and freshly made dumplings round out the meal. Craft cocktails and Japanese beer are the natural partners.
Toki Underground’s Japanese and Asian Fusion cooking earned it a Michelin Bib Gourmand, awarded since 2018 for good quality, good value cooking. It also won Eater’s 2011 Restaurant of the Year and has been voted best ramen in DC and Baltimore – recognition that still holds weight more than a decade later.
The atmosphere is relaxed and unpretentious, the kind of spot where you can come alone for a quick bowl or linger over a few small plates with friends. Lunch and dinner are both served, and the counter dining lets you watch the kitchen work.
