The story
Moody Tongue Sushi sits inside the newly renovated Hilton West Palm Beach, an intimate space that focuses on the precision of Japanese cuisine. The menu is built around two omakase options: an eight-course experience offered at 5pm and a thirteen-course format available throughout the evening. Both are led by Executive Sushi Chef Hiromi Iwakiri, whose hyper-seasonal approach highlights the best of what is available at the moment.
The restaurant is the sushi-focused sibling of the acclaimed Moody Tongue Brewery, and the pairing program is curated by brewmaster Jared Rouben, who has earned a Michelin star for his work at the brewery. Guests can expect a seamless integration of food and beer, with each course designed to complement a specific brew.
A few examples from the rotating menu include a King Crab Gunkan, finished with English pea and trout roe, paired with a Daidai Lager that carries Japanese bitter orange. Madai (sea bream) is presented with Florida orange zest and sea salt alongside an Orange Blossom Belgian Blonde. A Hokkaido Scallop Hand Roll combines potato skin, corn, bacon fat, and wasabi, matched with a Piquette Cerise made from Michigan Balaton cherries. A curated selection of spirits, wines, and cocktails is also available.
Moody Tongue Sushi has earned a Michelin Recommended distinction, a reflection of the kitchen’s skill and the thoughtful pairing program. The restaurant also offers private omakase dining experiences and larger reception-style events within the same space, making it suitable for celebrations that demand the same level of care and detail.
