The story
The founders of Fogo de Chão grew up on a traditional farm in the Serra Gaucha, the mountainous countryside of Rio Grande do Sul in Southern Brazil. There, they learned to cook in the churrasco style—a centuries-old tradition of slow-grilling meats over an open flame. After formal training as churrasqueiros in Rio and São Paulo, they opened their first restaurant in a wood structure outside Porto Alegre. The concept quickly earned a reputation, drawing politicians and celebrities from across Brazil.
Fogo de Chão arrived in the United States in 1997, opening in Dallas, Texas, at the request of loyal American guests. The Williamsburg location, at 11543 Regency Village Drive in Orlando, Florida, continues that legacy. The restaurant describes churrasco as "the culinary art" of fire, with beef at its center. The signature cut is picanha, the prime part of the top sirloin, lightly seasoned with rock salt and sliced thin. Other cuts include the bone-in ribeye (ancho), bacon-wrapped steak (medalhões com bacon), bottom sirloin (fraldinha), and beef ribs (costela) grilled for several hours. Guests can also enhance their experience with premium graded, 21-day-aged Wagyu options.
Beyond the fire-roasted meats, the experience includes a freshly curated Market Table with seasonal vegetables, salads, and authentic Brazilian sides. Bar Fogo offers Brazilian-inspired small plates, cocktails, and a wine list that earned the 2025 Wine Spectator Award of Excellence.
