The story
In the Ngo Gia Tu apartment complex of District 10, a family has been cooking the taste of old Saigon since before 1975. The story begins with Cô Phúc, who first set up a small dessert stall on Su Van Hanh Street to support her five children. Her cooking was so skilled that she began catering parties and weddings, and her beef stew—bò kho—became the dish everyone remembered.
Her eldest daughter, Nguyên, grew up near Chợ Lớn and inherited her mother’s talent. Blending the flavors of her mother’s kitchen with the Chinese-Vietnamese influences of the neighborhood, she opened Bò Kho Gánh. The name evokes the image of a street vendor’s carrying pole, but the restaurant is a cozy, permanent spot in the old apartment block. It serves a taste of pre-1975 Saigon that has drawn locals, international food shows, and now, the Michelin Guide.
The star is bò kho, a rich, aromatic beef stew. At Bò Kho Gánh, it is served in a traditional clay pot to keep it steaming hot. The broth is a family recipe passed down through two generations, deeply savory and sweet. The classic way to eat it is with a crusty baguette for dipping—the bread is left out for customers to help themselves, a testament to the generous, trusting spirit of old Saigon.
Beyond the classic bread and stew, the menu includes fresh egg noodles (mì tươi) and hủ tiếu, both swimming in the fragrant broth. A house specialty is the sườn cọng Bò Kho, featuring tender pork spare ribs added to the stew for extra depth. To balance the rich flavors, the family also offers their own traditional desserts, like the cool, refreshing chè tuyết yến. The dipping sauces—a Chinese-style satay and a Saigonese salt, chili, and lime—let you customize each bite.
In 2024 and 2025, the Michelin Guide awarded Bò Kho Gánh a Bib Gourmand, recognizing it as the only bò kho spot in Ho Chi Minh City to receive the honor for good quality, good value cooking. For the family, this recognition is a point of pride, but the daily rhythm of the restaurant remains unchanged: the clay pots bubble, the bread is stacked high, and the flavors of Saigon are served with the same warmth that has defined this place for two generations.
